Especially useful in cooling chocolate products, a Schebler Cooling Tunnel with counter flow air current introduces cold air at the opposite end of the product’s flow, protecting chocolate coatings from a sudden thermal shock that could cause fat bloom. With product and air moving in opposite directions, gradual heat transfer lets you maintain uncompromised quality.
